Real mānuka is opaque — a deep caramel cream that light doesn't pass through. If you can see through it, question it.
Turn the spoon
It should hold to the spoon and fold slowly, like soft caramel — thick, velvety, unhurried. Runny is a warning sign.
First taste
Let it melt on the tongue rather than swallowing. Expect rich toffee depth with a gentle herbal edge — nothing like table honey.
The finish
